Sweet
Teriyaki Mu Shu Vegetables
These crunchy vegetables are folded in soft flour tortillas to
be eaten out of hand. The peanut dipping sauce is optional.
6 Servings
1 cup grated carrot
2 green onions thinly sliced, including
tender tops
4 cups loosely packed shredded
Chinese (Bok Choy) cabbage
1/2 cup World Harbors® Maui Mountain Hawaiian Teriyaki (or WH Maui Hot Teriyaki),
plus 2 cups for dipping
1 teaspoon sesame oil
1 tablespoon chunky peanut butter
Vegetable cooking spray
6 flour tortillas
Spray a non-stick pan with vegetable cooking spray.
Add
carrots and cook over medium heat for 1 minute, stirring frequently.
Add
green onions, shredded cabbage, Teriyaki Sauce and sesame oil
and cook 3 to 4 minutes, or until vegetables are crisp tender.
Set
aside.
While
vegetables are cooking, wrap tortillas in a clean dish towel and
microwave 1 minute on high or until hot.
To
assemble, place 3 tablespoonfuls of the vegetable mixture in center
of tortilla. Wrap up like a burrito.
To
make the peanut dipping sauce, combine peanut butter and 1 cup
WH Teriyaki in a small bowl. Microwave 1 minute on high, stirring
midway to blend.
