Stuffed
Sweet Red Peppers
6 Servings
4 medium-sized red bell peppers
1 onion, finely chopped
2 cups sliced mushrooms
1 cup corn, frozen or fresh
1 cup cooked rice
1-1/4 cups World Harbors® Maui Mountain
Sweet 'n Sour Sauce
1 egg, lightly beaten
1/2 cup grated Jack cheese
Vegetable cooking spray
Cut
red peppers in half lengthwise. Remove seeds and membranes.
Set
aside
Spray
a non-stick pan with vegetable cooking spray.
Sauté
onions until soft, then add mushrooms and cook 5 to 6 minutes
over medium heat, stirring
Add
corn, egg, rice, cheese and 1 cup Sweet 'n Sour Sauce.
Spoon
mixture into pepper halves.
Pour
remaining 1/4 WH Sweet 'n Sour Sauce in a microwave-safe glass dish.
Place
peppers on top and cover loosely with waxed paper.
Microwave
on high (100%) until peppers are soft, 12-16 minutes, turning
dish and basting with WH Sweet 'n Sour Sauce midway.
