Scallop
Kabobs in Peanut Dipping Sauce
You can use either World Harbors® Maui Mountain Hawaiian Teriyaki or World Harbors® Maui Mountain
Hot Teriyaki Sauce with equally delicious results.
3-4 Servings
1 lb. sea scallops
12 cherry tomatoes
1 finely chopped green onion (optional)
2 tbs. chunky peanut butter
1 cup WH Maui Mountain Hawaiian or
WH Hot Teriyaki Sauce for dipping
sauce,
plus 1/2 cup for marinating
Bamboo skewers, soaked in water 30 minutes
In
a glass bowl, gently toss scallops with 1/2 cup WH Teriyaki Sauce.
Refrigerate
for 30 minutes.
Thread
scallops and cherry tomatoes on bamboo skewers.
Grill
or broil 3 minutes on each side, basting frequently. Set aside.
Combine
1 cup WH Teriyaki, chunky peanut butter and green onion (if using).
Heat in microwave for 1 minute on high, stirring midway to blend.
Serve
scallops with individual bowls of dipping sauce.
