Chicken Quesadillas

lb. chicken tenders
3/4 cup World Harbors® Fajita Marinade
1 medium tomato, diced
1 cup diced ripe avocado
1/4 cup sliced black olives
1 cup grated Monterey Jack cheese
Sour cream
4 flour tortillas
In
a bowl, combine the tomato, avocado and black olives and set aside.
Combine
chicken slices with WH Fajita Sauce, turning to coat.
Place
chicken in a microwave-safe 9-inch glass pie dish.
Cover with plastic wrap and vent one side.
Microwave
on high until cooked through, about 2 to 4 minutes.
Set
aside.
Place
one tortilla on a microwave-safe dinner plate.
Sprinkle
with half of the cheese. Microwave on high until cooked through,
about 2 to 4 minutes.
Set
aside. Repeat with remaining 3 tortillas.
Arrange
half the chicken on a tortilla and fold in half to cover it. Microwave for 10-30 seconds to warm chicken.
Top
with half of the tomato, avocado, and olive mixture and a spoon
of sour cream. Repeat with the remaining 3 tortillas.
