Mexican
Flavored Lamb Kabobs
Our World Harbors® Fajita Sauce & Marinade is flavored with the fragrant
spice cumin - an important ingredient in both Mexican & Middle
Eastern cuisine. It lends authentic flavor to this Mediterranean
classic.
4 Servings
1 lb. boneless leg of lamb, in 1" cubes
1/2 cup (or more) WH Fajita Sauce
2 small onions cut in 4 wedges each
4 plum tomatoes, quartered
Cooked couscous or rice
In
glass dish or re-sealable plastic bag, marinate lamb cubes in
WH Fajita Sauce 1 hour or more. Refrigerate.
Toss
tomatoes and onions lightly in marinade.
Thread
alternate cubes of lamb, tomato and onion onto skewers.
Grill
or broil 7-10 minutes, turning and basting.
Serve
over hot couscous or rice.
