Beef Pie
This is a Mexican version of Shepherd's Pie

1
pkg. (8-1/2 oz) corn muffin mix
1 egg
1/3 cup of milk
1 lb. lean ground beef
1/4 lb. bulk pork or turkey sausage
1/2 cup World Harbors® Fajita Sauce
1 can (6 oz) whole kernel corn, drained
1 can (14 oz) diced tomatoes, drained
1/2 cup shredded Cheddar cheese
Mix
corn muffin mix, egg and milk until just moistened. Set aside.
Mix
ground beef and sausage in microwave-safe baking dish.
Microwave
on high (100%) until meat loses pink color, 5 to 9 minutes, stirring
once to break up beef. Drain
Stir
in tomatoes, corn and WH Fajita Sauce. Microwave on high (100%) 6
minutes, stirring once.
Spread
corn muffin mixture over meat.
Microwave
at medium-high (70%) 5 minutes.
Increase
power to high (100%) and continue cooking another 8 minutes.
Sprinkle
with cheese during last 2 minutes of cooking.
