Marinating Tips:

How long should you marinate?

It all depends on the type and cut of meat or seafood, and also on the amount of time you have:

A tender white fish or shrimp needs only to be marinated only 20-30 minutes.

Thin strips of meat or poultry and cut up vegetables from 1-3 hours.

Larger pieces of meat will take longer, and you can marinate flank steak overnight.

Since most of the recipes on this website use marinades as flavoring agents, they call for a shorter marinating time.

Always marinate foods in glass, porcelain or plastic containers; never in aluminum bowls, which react to acids. A re-sealable plastic bag is ideal... and disposable!

Pour enough marinade to coat food, and turn several times to distribute marinades evenly.

Always refrigerate marinating foods, even for short periods of time.

Drain foods before cooking and reserve the marinade for basting only.

Discard any unused marinade which has come in contact with raw meat. Use fresh marinade, cold or heated, for dipping.

What if it rains?
The next best thing to grilling is broiling. For best results preheat broiler at least 5 minutes. Place foods on rack - a cooling rack over a pan or cookie sheet with low sides works well.

Barbecuing Tips:

Brush cold grill rack with oil to prevent food from sticking.

Preheat gas grill 5-10 minutes with cover on before cooking.

Remember charcoal briquettes require 30-45 minutes to reach the red-hot stage for searing steaks and burgers.

Bring foods to room temperature before grilling. Baste & turn frequently while cooking.
