Guadalupe Mexican Beef Steak
4 Servings

4 lean steaks, 1" thick
1 medium onion, thinly sliced
1 medium green bell pepper, thinly sliced
1 (14 oz.) can diced tomatoes
1 cup World Harbors® Fajita Marinade
Grated Parmesan cheese (optional)
Vegetable cooking spray
       (or 2 tablespoons margarine)

In a non-metallic dish, marinate steaks with WH Fajita Marinade 1-8 hours in refrigerator. Remove steaks from marinade and drain.

Spray a non-stick skillet with vegetable cooking spray. Sauté onions until translucent.

Add pepper and cook 3 minutes.

Add tomatoes. Simmer 5 minutes. In a separate skillet sprayed with cooking spray, sear steaks on both sides to desired doneness, turning once.

Place steaks on individual plates.

Top each with a tablespoonful of vegetable mixture. Sprinkle with a little Parmesan cheese.

Serve with French fries or rice pilaf.
