Gingery-Sweet
Chicken with
Peanut Dipping Sauce
Peanut Sauce is widely used in Thai cuisine. For this exotic dish,
we use World Harbors® Marinade as a base for a spicy peanut sauce,
and as a marinade.
4 Servings
4 Boneless chicken breast halves
1 cup WH Thai Marinade for dipping sauce,
plus 1/2 cup for marinade
2 Tablespoons chunky peanut butter
Salt and pepper
Season
chicken breasts with salt and pepper. In glass dish, pour 1/2
cup WH Thai Marinade over chicken breast, turning to coat.
Cover and refrigerate 1 hour or more.
Preheat
grill or broiler and cook chicken 10 minutes on each side, basting
frequently. Set aside.
Combine
1 cup WH Thai with 2 tablespoons of peanut butter. Heat on stove
top or microwave for 1 minute on high, stirring to blend midway.
Serve chicken breasts with individual side dishes of sauce for
dipping.
