Beef and Cheese Topped Potato Dinner
4 Servings

1 pound lean ground beef or turkey sausage
4 medium baking potatoes
1/2 cup World Harbors® Fajita Sauce
      (or favorite WH sauce)
1/2 teaspoon salt
1 cup shredded cheddar cheese
Vegetable cooking spray

Pierce potatoes with fork. Microwave on high 11-13 minutes or until tender, rotating midway. Let stand 5 minutes before handling.

Meanwhile, in a skillet sprayed with cooking spray, saute the beef until brown & crumbly. Drain.

Add WH Fajita sauce and simmer for 5 minutes.

Stir in cheese. Heat until cheese has melted.

Cut a slit lengthwise in potatoes. Mash lightly with fork.

Season lightly with salt.

Spoon beef & cheese mixture over each potato.
