Bean
& Cheese Topped Potato
4 Servings
4 medium baking potatoes
1 can (15 oz) pinto beans
1/4 cup World Harbors® Fajita Sauce
1 green onion, thinly sliced
1 cup shredded Cheddar cheese
1/2 teaspoon salt
Pierce potatoes with fork. Microwave on high 11 to 13 minutes
or until tender, rotating midway. Let stand 5 minutes before handling.
Meanwhile,
combine beans and WH Fajita Sauce in a skillet and cook over medium
heat until heated through. Stir in cheese. Heat until cheese has
melted.
Cut
a slit lengthwise in potatoes. Mash lightly with a fork and season
lightly with salt. Spoon equal amounts of the bean mixture over
each potato. Top with green onions.
